In Patagonia, I discovered Asado, a traditional grilling method that highlights flavor and fosters community. Participating in the cooking, I learned the value of patience, quality ingredients, and how fire enhances taste. Asado, rooted in Argentina's ranching traditions, is an art form that blends refined techniques with the simplicity of open-fire cooking, making it a unique cultural celebration.
Asado is a communal gathering around a parrilla to grill local meats like beef, pork, and lamb. Cuts such as short ribs, flank steak, and sausages are seasoned to highlight their natural flavors, while cooking over wood or charcoal adds a smoky taste.
